- yam 1.2 kg
- wheat starch 400 gm
- shortening / margarine 225 gm
- sugar 75 gm
- salt
- pepper
- spice powder
- sesame oil
- ammonia powder (optional)
- water chestnut cubed
- radish cubed
- green peas
- vegetarian ham cubed
- vegetarian char siew cubed
- minced vegetarian meat
- beancurd cubed
Procedure:
- peel, wash, cut, steam yam till cook
- mash hot yam into a paste
- mix 200gm wheat flour with hot water
- mix with yam paste
- add sugar, salt, spice powder, pepper, shortening / margarine
- knead into a dough, cover and rest
- heat oil in wok, fry bean curd, cut into cubes set aside
- fry radish, green peas, vegetarian ham, vegetarian char siew, vegetarian mince meat
- add water chestnut cubes, beancurd cubes and water
- season with salt, pepper, sugar, vegetarian oyster sauce, soy sauce, sesame oil
- add tapioca flour, stir and mix well immediately, cool before use
- take a portion of yam dough, wrap over a spooful of filling
- shape into a ball, repeat for the rest of the dough
- deep fry yam balls until crispy, drain oil, serve
