Food Allergy

If you note any food allergy reaction whenever you or your love ones ate certain food ... from rashes, cough to asthma and anaphylactic reaction ... confirm it with an allergy test ... besides taking food allergen off the recipe and menu ... you need to ensure that there are no cross contamination from the worktop to equipments used ... read labels of packaged products ... unsured don't use ... it can be life threatening for someone with severe allergy and anaphylactic reaction.

Fried Yam Ball

Ingredients:
  • yam 1.2 kg
  • wheat starch 400 gm

  • shortening / margarine 225 gm
  • sugar 75 gm
  • salt
  • pepper
  • spice powder
  • sesame oil
  • ammonia powder (optional) 
  • water chestnut cubed
  • radish cubed
  • green peas
  • vegetarian ham cubed
  • vegetarian char siew cubed
  • minced vegetarian meat
  • beancurd cubed

Procedure:
  1. peel, wash, cut, steam yam till cook
  2. mash hot yam into a paste
 
  1. mix 200gm wheat flour  with hot water
  2. mix with yam paste 
  3. add sugar, salt, spice powder,  pepper, shortening / margarine
  4. knead into a dough, cover and rest
  1.  heat oil in wok, fry bean curd, cut into cubes set aside
  2. fry radish, green peas, vegetarian ham, vegetarian char siew, vegetarian mince meat
  3. add water chestnut cubes, beancurd cubes and water
  4. season with salt, pepper, sugar, vegetarian oyster sauce, soy sauce, sesame oil
  5. add tapioca flour, stir and mix well immediately, cool before use
  1. take a portion of yam dough, wrap over a spooful of filling
  2. shape into a ball, repeat for the rest of  the dough
  3. deep fry yam balls until crispy, drain oil, serve
